Apple Horseradish Sauce

- 2 Apples Granny Smith
- 3 tbsp
horseradish root
grated
- 1/2 tsp
fresh thyme
white, chopped
- 2 tbsp
onion
diced - 1 tbsp lemon juice freshly squeezd
- 1 tbsp vinegar champagne vinegar
- 2
water
- 1 tbsp
raw honey
or coconut sugar
- 1 tsp dijon mustard
- 3 tbsp
yogurt
or cream cheese, sour cream (for vegans coconut yogurt) - salt and pepper to taste
Peel the apples and grate it with a cheese grater until you reach the core.
Place the grated apples and chopped onion in a saucepan with grated horseradish root, thyme, and water.
Bring to a boil, and then reduce the temperature to low.
Cook with a lid on for about 15 minutes on low heat until the water has evaporated and the apple is soft.
Remove from heat and transfer to a bowl.
Add the extra horseradish, lemon juice, champagne vinegar, honey, or coconut sugar.
Season with sea salt and pepper
Once it’s is cold, mix in the coconut yogurt or yogurt cream cheese
Store any portions you’re not using in the refrigerator. It will keep for 3-4 days.
