Easy Chocolate Avocado Pudding

Ingredients

  • 2 medium ripe avocados pits removed
  • 4 tbsp cacao powder
  • 1/2 cup full fat coconut milk
  • 3 tbsp maple syrup or honey 
  • 1 tsp vanilla extract
  • 1/2 tsp fresh squeezed lemon juice
  • 1/8 tsp salt

Instructions

  • Combine all ingredients in a blender or a food processor and blend until smooth. Scrape down the sides if needed and add more milk if the pudding is too thick. 
  • Taste test it to see if your pudding tastes to your liking. You can always add more ingredients.
  • Transfer to a glass container and serve cold with your favorite topping, yogurt, cashew whipped cream, or coconut whipped cream.
  • Refrigerate for up to 1 day.
