Easy Chocolate Avocado Pudding

- 2 medium ripe avocados pits removed
- 4 tbsp cacao powder
- 1/2 cup full fat coconut milk
- 3 tbsp maple syrup or honey
- 1 tsp vanilla extract
- 1/2 tsp fresh squeezed lemon juice
- 1/8 tsp salt
Combine all ingredients in a blender or a food processor and blend until smooth. Scrape down the sides if needed and add more milk if the pudding is too thick.
Taste test it to see if your pudding tastes to your liking. You can always add more ingredients.
Transfer to a glass container and serve cold with your favorite topping, yogurt, cashew whipped cream, or coconut whipped cream.
Refrigerate for up to 1 day.
