- 1 cauliflower Large head
- 1 onion
- 5 celery stalks
- 4 garlic cloves
- 1 veggie broth or chicken stock
- 2 tbsp olive oil
- 1 cup full fat coconut milk
- 1 cup cashews
- 1 tbsp onion powder
- 1 tbsp basil
- 1/2 tbsp black pepper
- 1/4 tsp nutmeg
- 1/2 lemon juice
- Chives for garnish
- 6 strips turkey bacon for garnish
- Wash all the veggies and chop them
Pressure cooker method:
Sautee onion and garlic until brown. Add all the ingredients to the pot beside chives and bacon. If you need more liquid, you can add more water or stock. Set the pressure cooker for 30 minutes.After when the soup is done cool it down. Blend in the blender or use a hand blender.Serve with bacon and chopped chives.
