Ingredients

Red Layer

  • 1 cup Starwberries or raspberries
  • 1 tbsp Honey maple syrup or sweetener of your choice
  • 2 tbsp Water for blending if needed

White Layer

Blue Layer

  • 1 cup Wild blueberries
  • 1 tbsp honey
  • 1 tbsp Lemon juice freshly squeezed

Instructions

  • Making Each Layer:
    Red Layer (Strawberry-Infused): Blend fresh strawberries or frozen (thawed) strawberries in a blender until smooth. Fill popsicle molds ⅓ of the way. Freeze for about 30 minutes.
    White Layer (Creamy Midwest Magic): Mix coconut yogurt, honey, and vanilla. Add this on top of the frozen red layer and freeze for another 30 minutes.This layer may need closer to an hour before frozen solid.
    Blue Layer (Blueberry Awesomeness):Puree fresh blueberries with lemon juice until smooth. Pour on top of the white layer. Insert popsicle sticks and freeze for at least 4 hours.
    Each layer's consistency should be thick enough to sit without bleeding into the next.
    A small tip: Use a spoon or pour the layers gently to avoid blending colors.
    Once assembled, popsicles need time to freeze fully—plan for at least four to six hours or overnight.
    Tips: Dip the molds in warm water for 10–15 seconds to loosen the popsicles. Gently slide each popsicle out, holding the sticks for grip—no tugging needed!
