Ingredients

  • 2 Sweet potatoes
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 2 tbsp olive oil
  • 1 tbsp Fresh or dried basil
  • 1 1/2 cup Greek yogurt or plain coconut yogurt
  • 1 tsp Lemon zest
  • Black pepper to taste

Instructions

  • Start with whole sweet potatoes—smooth-skinned and medium-sized work best. Wash them under running water to remove dirt, then pat them dry with a clean towel. Drying is essential for crisp skin!
    2. Next, take a sharp knife or a cutlery knife and poke holes around the sweet potato—this helps steam escape while it cooks. Aim for about 6-8 pokes per potato. If your knife is dull, stop and sharpen it.
    3. Rub a thin layer of oil (like olive or avocado oil) over the potatoes. Rub it with paprika, dry basil, salt and pepper, ensuring it is evenly coated.
    4. Set your air fryer to 390°F (or your model's preheat option) for 30-50 minutes, depending on size.
    5. Place the potatoes in a single layer in the air fryer basket. Avoid overcrowding—it's better to make two batches than compromise texture. If your potatoes tend to stick, consider lining the bottom with parchment paper.
    6. For the best results, flip the potatoes halfway through cooking. This small action ensures even doneness and crisp skin all around. You're looking for skin that feels firm and slightly crisp when touched and an inside that's soft and fluffy.
    7. Once cooked, slice across the top of each sweet potato and slightly push the ends inward to pop the center. Mix yogurt with lemon zest and a pinch of salt. Spoon a generous dollop of Greek yogurt into the center.
    8. From here, go crazy with your favorite toppings. Add crispy bacon or diced bell peppers for sweetness. A sprinkle of fresh herbs like cilantro or parsley works wonders.
