Ingredients

  • 1/2 Pinapple
  • 6 oz Blueberries
  • 6 oz Raspberries
  • 4 Kiwi
  • 1 box Strawberries
  • 3 tbsp Lime juice or lemon juice
  • 3 tbsp Orange juice fresh
  • 1 tbsp Honey optional

Instructions

  • Wash and dry all the fruit using a colander. Fresh berries especially need gentle handling.
    Peel and chop the fresh pineapple and kiwi into bite-sized chunks using a sharp knife.
    Hull and halve the strawberries, and gently toss them with the blueberries and raspberries in a large bowl.
    Whisk together lime juice and maple syrup (or orange juice) in a small bowl to create a tangy dressing.
    Drizzle dressing over the fruit and toss gently using a wooden spoon.
    Chiffonade the mint leaves (stack, roll, slice) and sprinkle on top.
    Serve in a chilled serving bowl and enjoy at room temperature or lightly chilled.
