- 3 Oranges
- 2 Lemons
- 1/2 cup Lemon juice freshly squeezed
- 1/2 cup Honey
- 1 cup Fresh ginger squezzed
- 3/4 cup Fresh turmeric
- 1/2 cup Yuzu juice optional
- Starter culture optional
Chop the carrots into small pieces so they release flavor easily during fermentation.2. Place the carrots into a clean fermentation jar along with freshly grated or sliced turmeric and ginger. Add the orange, lemon, and yuzu juice, along with the honey.3. Next, add the starter culture (if using) and filtered water.4. Stir everything well so the honey dissolves and the ingredients are evenly distributed. Cover the jar loosely so gases can escape during fermentation.5. Leave the mixture at room temperature for a couple of days as fermentation begins. During this time, the beneficial bacteria convert natural sugars into probiotics and enzymes. This transformation is what turns the mixture into a probiotic fermented drink with natural bubbles.6. Once the drink tastes pleasantly tangy and lightly fizzy, strain the liquid and transfer it to bottles. Chill in the refrigerator before serving.
