Ingredients

  • 1 1/2 cups Cashews
  • 1 cup Parsley
  • 1 tbsp Lemon zest
  • 1 tbsp Lemon juice
  • 1/4 cup Olive oil
  • 3 cloves Garlic minced
  • Salt to taste
  • Black pepper to taste
  • Red pepper flakes Opryional for additional kick
  • Red Bell Pepper Optinal for sweetnes

Instructions

  • Begin by toasting the cashew nuts in a dry skillet over medium heat until golden brown and fragrant. Be sure to stir frequently to prevent burning.
    Once toasted, transfer the cashews to a food processor and pulse until finely ground.
    Add the chopped parsley, minced garlic, and lemon zest to the food processor, along with a pinch of salt and pepper.
    Pulse the mixture until well combined, scraping down the sides of the processor as needed.
    Transfer the Cashews Gremolata to a bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
