  • Prepare the Chia Seed Pudding
    Combine full-fat coconut milk, lemon juice, vanilla extract, and chia seeds in a large mixing bowl.
    Add erythritol or sweetener of your choice and stir thoroughly to ensure no clumps.
    Let the mixture sit for 10–15 minutes, stirring occasionally, until the chia seeds absorb the liquid and form a thick pudding.
    Bloom gelatin in 1/4 cup of cold water for 3 minutes, then add 1/4 cup of hot water and dissolve it to prevent lumps. Cool it down for 5 minutes and mix it with the chia mixture (for the vegan version, use agar agar).
    Transfer the chia pudding mixture to a spring pan and put in the fridge for 3 hours. 
    Make the Raspberry Layer
    Wash a small box of raspberries (6 oz) and mash them with a fork in a small bowl. Set it aside.
    When the cake mixture is settled in the fridge, prepare the no-sugar raspberry jello according to the package instructions. Use two packages. Allow the jello mixture to cool slightly, but don't let it set completely.
    Layer the Cake
    Spread the mashed raspberries on top, then add the cooled raspberry jello to the chia pudding layer. Refrigerate until the jello is fully set.
    Decorate
    Once the jello layer is set, decorate with other berries and berry compote if you made one, but this is optional. You can also decorate with whipped cream or add your favorite toppings.
    Optional: Raspberry Syrup
    Simmer raspberries in a small saucepan with the sweetener of your choice for 10 minutes, then strain the mixture through a sieve.
