Creamy Spinach Soup With Mint

Ingredients

  • 1 Onion roughly chopped
  • 1 Leek Chopped
  • 2 tbsp Garlic minced
  • 2 tbsp Olive oil
  • 1 bunch Celery
  • 2 tbsp Thyme fresh
  • 2 tbsp Basil dried
  • 5 Zucchini medium, chopped
  • 10 oz Spinach fresh
  • 2 1/2 Lemon juiced
  • 1/2 tsp Lemon zest
  • 2 oz Mint fresh
  • Red pepper flakes to tastes
  • Salt to tastes
  • Black pepper to tastes
  • Coconut milk optional or creme fraise

Instructions

  • Heat olive oil in a large pot over medium heat.
    Add leek, onion, and garlic. Sauté for 3-4 minutes until softened.
    Add zucchini and celery.
    Chop thyme and basil and add it to the pot.
    Saute for 4 minutes.
    Pour in vegetable stock and gently simmer over a medium flame. Let cook for 25 minutes.
    Add fresh spinach, lemon zest, and mint leaves. Cook for another 2-3 minutes.
    Blend with an immersion blender or food processor until smooth.
    Stir in coconut milk (optional) and lemon juice. Season with salt, black pepper, and red pepper flakes.
    Serve warm with a swirl of crème fraîche or, sour cream or plain.
