- 1 Onion roughly chopped
- 1 Leek Chopped
- 2 tbsp Garlic minced
- 2 tbsp Olive oil
- 1 bunch Celery
- 2 tbsp Thyme fresh
- 2 tbsp Basil dried
- 5 Zucchini medium, chopped
- 10 oz Spinach fresh
- 2 1/2 Lemon juiced
- 1/2 tsp Lemon zest
- 2 oz Mint fresh
- Red pepper flakes to tastes
- Salt to tastes
- Black pepper to tastes
- Coconut milk optional or creme fraise
Heat olive oil in a large pot over medium heat.Add leek, onion, and garlic. Sauté for 3-4 minutes until softened.Add zucchini and celery.Chop thyme and basil and add it to the pot. Saute for 4 minutes.Pour in vegetable stock and gently simmer over a medium flame. Let cook for 25 minutes.Add fresh spinach, lemon zest, and mint leaves. Cook for another 2-3 minutes.Blend with an immersion blender or food processor until smooth.Stir in coconut milk (optional) and lemon juice. Season with salt, black pepper, and red pepper flakes.Serve warm with a swirl of crème fraîche or, sour cream or plain.
