Ingredients

  • 6 Chicken breast
  • 1 can Diced tomatoes or fresh cherry tomatoes
  • 3/4 cup Sun-dried tomatoes chopped and soaked or one from a jar
  • 1 mediun Onion diced
  • 6 cloves Garlic minced
  • 3 oz Basil fresh
  • 1 Lemon juiced
  • 1 tbsp Lemon zest
  • 2 tbsp Olive oil
  • 1/2 cup Parmesan
  • Salt and black pepper to taste
  • Red pepper flakes for a kick

Instructions

  • Preparing the Chicken
    Start soaking or cooking sun-dried tomatoes in a small saucepan. seasoning the chicken breasts with salt and pepper on both sides. Heat oil in a large skillet over medium-high heat.  Season chicken with salt and pepper. Once the oil is hot, add the chicken breasts and cook for about 5-7 minutes on each side or until golden brown. Remove the chicken from the skillet and set aside.
    Sautéing the Aromatics
    Add the chopped onion and sauté in the same hot skillet for 3-4 minutes until it becomes translucent. Add the minced garlic and cook for another minute, ensuring it doesn't burn. Deglaze the pan with 1/4 cup of water.
    Creating Cream Sauce
    Add the halved cherry tomatoes (or diced tomatoes) and soaked sun-dried tomatoes to the skillet. (if you cooked or soaked sun-dried tomatoes, add this water as well). Cook for about 10 minutes until they soften and release their juices. Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese, allowing it to melt and thicken the sauce. Season with salt and pepper to taste.
    Adding the Chicken and Basil
    Return the cooked chicken breasts to the skillet, nestling them into the creamy sauce. Let them simmer for about 15 minutes, allowing the flavors to meld together. Add the chopped basil and squeeze in the juice of one lemon and lemon zest, stirring to combine. The lemon juice adds a fresh, zesty note that balances the richness of the cream.
    Serving Suggestions
    Serve the creamy Italian chicken over a bed of pasta, rice, or alongside crusty bread to soak up the delicious sauce. A simple side salad with a light vinaigrette pairs perfectly with this dish, adding a fresh contrast to the creamy richness.
