Ingredients

Dragon Fruit Simple Syrup

  • 1 1/2 cup Red dragon fruit frozen at the stores
  • 1/2 cup Water
  • 1/2 cup Erythritol or sweetener of your choice- honey, coconut sugar

Cocktail

  • 4 tbsp Dragon fruit simple syrup
  • 1/2 cup Red dragon fruit frozen, muddled
  • 1/8 cup Lime juice freshly squeezed
  • 3 tbsp Lemon juice freshly squeezed
  • 4 oz Indigo empress gin or other
  • Ice
  • Sparkling water

Instructions

  • Make the simple syrup: In a small saucepan, combine chopped red fresh dragon fruit, equal parts water, and sweetener. Simmer gently until the fruit breaks down, about 10 minutes. Strain and cool.
    2. Prep the fruit: Cut the dragon fruit in half and scoop out the flesh. Cube a few pieces for muddling, reserving some for garnish.
    3. Muddle: In your shaker, muddle 2–3 tablespoons of cubed dragon fruit with a splash of simple syrup.
    4. Add spirits and juice: Pour in 2 oz gin, ½ oz simple syrup, and ½ oz lime or lemon juice (if using). Add a handful of ice.
    5. Shake: Shake briskly for 10 seconds to combine and chill.
    6. Strain: Strain into an ice-filled glass, using a fine mesh strainer for a smooth finish.
    7. Top with bubbles: Pour in 3–4 oz sparkling water gently to keep things fizzy.
    8. Garnish: Add a wheel of dragon fruit, a sprig of mint, or an edible flower.
