Ingredients

Crust

  • 1 1/2 cup Honey crackers or Graham crackers from Simple Mills
  • 1/8 cup Erythritol or coconut sugar if needed
  • 6 tbsp Butter unsalted and melted

Filling

  • 28 oz Coconut unsweetened condensed milk or unsweetened condensed milk
  • 6 Egg yolks large
  • 1/2 cup Erythritol
  • 1 cup Key lime juice (fresh or bottled)
  • 1 tsp Lime zest

Instructions

  • Preparing the Crust
    Combine the Ingredients: Put graham crackers in the food processor and pulse it until it creates a flour-like consistency. Add sugar and melted butter if you feel like you need it.
    Pulse it until evenly combined. Press the mixture firmly into the bottom of the prepared pan. Bake for 8- 10 minutes until lightly golden. Let cool slightly on a cooling rack.
    Preparing the Filling
    Mix the Ingredients: In a large bowl, whisk sweetened condensed milk, egg yolks (room temperature for easier mixing), and fresh key lime juice together. Add a pinch of key lime zest for an extra pop of citrusy flavor.
    Pour Over the Crust: Carefully pour the filling over the crust once the crust is cooled. Spread evenly with a spatula to cover every corner.
    Bake for Perfection: Place the baking dish back in the oven at 350°F and bake for about 15- 20 minutes until the filling is set but still slightly jiggly in the center. Allow it to cool on a wire rack before moving it to the fridge. Chilling and
