  • In a large mixing bowl, cream the butter (make sure it's softened) and your sugar of choice (white, coconut, or allulose) with your hands. Ensure you don't overmix it, as this will result in a super soft texture.
    2. Add gluten-free flour blend and salt. Slowly mix the dry ingredients into the wet ingredients.
    3. Add vanilla extract, lemon zest, lavender extract, lavender syrup, milk, and lemon juice. Mix until everything is fully incorporated and a smooth butter cookie dough forms.Gently fold in the lavender.
    4. Wrap the dough in plastic wrap and chill it for 30–45 minutes. This chill time helps the cookies hold their shape and enhances flavor.
    5. Preheat the oven to 350°F and line a cookie sheet or sheet tray with parchment paper. Scoop the dough into 1-inch balls using a medium cookie scoop, or shape by hand. Flatten slightly or use a cookie cutter or cookie press if desired. Alternatively, roll out the dough with a roller, then cut the cookies with a cookie cutter.
    6. Place the cookies on the prepared baking sheet, lined with parchment paper, spacing them evenly. Bake for 18 minutes, or until the edges are golden brown.
    7. Let cool on the cookie sheet for a few minutes before transferring to a wire rack.
