Ingredients

  • 4 Heirloom tomatoes medium to large
  • 1 English cucumber
  • 4 cloves Garlic
  • 2 Red bell pepper
  • 1 Shallot small
  • 1/2 cup Basil packed
  • 1/4 Serrano chili or more if you like it spicy
  • 2 tbsp Lemon juice
  • 1/8 cup Red wine vinegar
  • 1/2 tsp salt
  • 1/2 tsp Black pepper

Instructions

  • Chop your fresh tomatoes into large chunks. (No need to peel.)
    2. Dice cucumber, red bell pepper, shallot (or red onion), and serrano chili.
    3. Add all chopped ingredients into a Vita Mixer.
    4. Blend at medium speed until smooth or pulse for a chunkier texture.
    5. Chill in the fridge for at least an hour.
    6. Taste and adjust seasoning with salt, black pepper, or a splash more vinegar.
