Juniper Berry Simple Syrup
- 1 cup Water
- 1 Rosemary Spring
- 1/2 cup Monk fruit with erythirol or 1 cup of sugar
- 1 tbsp Juniper berries lightly crushed

- 1 cup Cranberries muddled
- 2 cans Tonic water the one without sugar or low sugar
- 2 Oranges freshly juiced
- 2 Limes freshly squeezed
- 1/2 tsp Fermented lemon paste or 1 tbsp lemon juice
- 6 drops Walnut bitters
- 6 drops Aromatic bitters
- Sparking water if needed
- Rosemary spring and cranberries for garnish
- Ice

Combine Ingredients: In a small saucepan, combine water, sugar, and crushed juniper berries.Simmer: Cook it over medium heat. Stir occasionally until the sugar fully dissolves. Once dissolved, lower the heat and allow the syrup to simmer gently for 10 minutes.Infuse: Remove the saucepan from the heat and let the juniper berries steep in the syrup as it cools. This ensures the syrup captures their aromatic, piney flavor. Steep for a more pronounced taste for at least 20–30 minutes or longer.Strain and Store: Strain the syrup through a fine mesh sieve to remove the berries. Pour the syrup into a clean glass jar or bottle and seal tightly.Storage: Store the syrup in the refrigerator, where it will keep for up to two weeks.
