Lavender Lemon Rice

This lavender lemon rice is a light, fluffy, floral, and zesty spring recipe that works as a perfect side dish for spring or summer. A bit sweet, savory, and lemony, it highlights why lavender and lemon are a perfect flavor pairing and proves lavender is not only for baking.

Ingredients

  • 2 cups Rice
  • 4 cups Water
  • 2 tbsp Levender syrup
  • 2 tbsp Lemon zest
  • 10 drops Laveneder extract optional
  • 1/4 cup Avocado oil
  • 1 tbsp Honey
  • 1 tbsp Lemon juice
  • Salt and pepper to taste

Instructions

  • Rinse the rice thoroughly until the water runs clear. This removes excess starch, ensuring the final texture is light and fluffy.
    2. In a saucepan, I bring water to a gentle boil and add the rice. Bring it to the boil, then lower the heat, cover, and simmer for 20 minutes or so. Check if teh rice is ready. It should not be sticky!
    3. Once the rice is cooked, turn off the heat and let it sit covered for a few minutes. Then I fluff it gently with a fork.
    4. Transfer it to a bowl and let it cool for 10 minutes.
    5. Add lavender syrup, avocado oil, a tiny drop of lavender extract, honey, salt, sprinkle in fresh lemon zest, and finish with lemon juice and lavender flowers.
    6. Fold everything together carefully so the grains stay separate. Taste and adjust. Sometimes it needs a little more zest. Sometimes just another drop of lemon juice to bring that lemony brightness forward.
