Leftover Turkey Tacos

If you’re tired of dry, boring leftovers, this recipe will show you how to transform leftover Thanksgiving turkey into irresistible leftover turkey tacos.

Ingredients

  • 3 cups Leftover roasted turkey meat shredded or chopped
  • 1/2 tbsp Cumin
  • 1/2 tsp Chili powder
  • 1/4 tsp Oregano
  • 1/2 tsp Onion powder
  • 1/2 tsp Garlic powder
  • 1/2 tsp Smoked paprika
  • 1 tbsp Avocado oil
  • 1/4 tsp Salt
  • 1 cup Pico de Gallo
  • 1 cup Salsa verde
  • 3 springs Green onion
  • 1/2 cup Cilantro chopped
  • 1 Jalapeno sliced or diced
  • 2 Limes to juice

Instructions

  • Mix your spices (smoked paprika, cumin, chili powder, salt, onion, and garlic powder) in a medium bowl.
    2. Chop or shred your turkey and transfer it to the bowl with spices and incorporate the spices into the meat.
    3. Warm your turkey in a skillet with a little oil and a spoonful of salsa verde to keep it juicy.
    4. Warm up your tortillas.
    5. Slice jalapeño, chop cilantro and green onion. Once the turkey is warmed through, taste and adjust, add more salsa verde, a pinch of salt, or extra lime.
    6. Assemble your tacos with warm tortillas, turkey mixture, pico de gallo, cilantro, and your choice of salsas and cojita cheese, if you feel like it.
    6. Finish with fresh lime, because lime is life.
