- 1 lbs Cashew soaked
- 2 cups Lilac blossoms
- 3/4 cup Lilac simple syrup
- 1 can Coconut milk full fat
- 3 tbsp Vanilla
- 3/4 cup Erythritol sugar
- 1/4 cup Lemon juice Freshly squeezed
- 10 drops Lavender extract or 3 tbsp lavender syrup
Lilac Syrup
- 2 cups Lilac blossoms
- 1 cup Water
- 3 slices Orange
1.Soak your cashews overnight in cold water. Drain and rinse before using.2. Make the lilac syrup: In a saucepan, combine lilac flowers, a cup of sugar (or erythritol), orange slices, and water. Bring it to a boil and turn off the heat. Let it sit and infuse for at least 5 hours. Then strain out the green stems and petals.3. In a blender, combine soaked cashews, coconut milk, lilac syrup, lemon juice, and vanilla extract. Blend until silky smooth. Taste and adjust the sweetener if needed.4. Pour the mixture into your glass container and cover with a lid. Freeze until relatively firm- 5 hours. Check on it because you don't want the ice cream to be too frozen. You won't be able to scoop them out, and you would have to wait for them to thaw a bit.5. Scoop, serve, and top with lilac cream or other pretty garnishes.
