  • 3/4 cup Water
  • 1 tbsp Lemon zest
  • 3/4 cup Erythritol or sugar
  • 1/4 cup Lemon juice
  • 1/2 cup Limoncello

Instructions

  • 1. Make the simple syrup: Combine equal parts sugar and water in a small saucepan. Heat over low heat, stirring until the sugar dissolves. Let cool to room temperature.
    2. Make the Fruit Base: In a food processor, combine the raspberries, lemon juice, and lemon zest. Blend until smooth.
    3. Strain It: Push the raspberry mixture through a fine-mesh strainer to remove the pesky raspberry seeds (optional). A spoon's back of a spoon helps here.
    4. Combine: Mix the fruit puree, simple syrup, and your bit of vodka or limoncello in a medium bowl.
    5. Freeze: Freeze it for at least 4 hours, covered with a lid.
