  • 20 oz Coconut yogurt
  • 18 oz Raspberries fresh
  • 1/2 cup Granola
  • 1/4 cup Erythritol + 2 tbsp for whipping cream
  • 1 cups Whipped cream
  • Chocolate shaving for decoration
  • Blackberries for garnish
  • 1 pint Whipping cream

Instructions

Raspberry Compote

  • Wash 12 oz of raspberries and pat dry with a paper towel.
    Transfer to a small saucepan. Add erythritol and simmer for 10 minutes.
    Strain in through the mesh sieve and let it cool.

Putting It All Together

  • Wash the Raspberries: Rinse the fresh raspberries in a small bowl filled with cold water. Gently pat them dry with a paper towel.
    Prepare the Cream: In a mixing bowl, whip heavy cream with a sweetener until stiff peaks form. Sweeten to taste and add a splash of vanilla extract. For an extra creamy texture, consider folding in a cream cheese mixture.
    Layer the Ingredients: Place a layer of raspberries at the bottom of your dessert glasses.
    Add a dollop of whipped cream and coconut or Greek yogurt for a tangy twist.
    Sprinkle granola or crushed cookies for crunch.
    Pour some of the raspberry compote.
    Repeat the process, finishing with a final layer of whipped cream on top.
    Optional: Add a spoonful of raspberry purée for added flavor and a vibrant splash of color.
