  • Preheat your oven to 425°F.
    2. Wash and peel the sweet potatoes if desired. I often leave the skin on after a good scrub because it adds texture and extra nutrients.
    3. Cut the sweet potatoes into evenly sized ¾-inch cubes and transfer them to a large bowl.
    4. Add chopped thyme, olive oil, and salt, and mix it together, covering every piece of the sweet potatoes.
    5. Place them on a large baking sheet lined with parchment paper.
    6. Spread into a single layer, leaving space between each cube. Roast for 15 minutes.
    7. Flip the potatoes. Roast another 15 minutes until deeply caramelized and fork-tender.
    8. Serve immediately.
