Cupcakes

  • Preheat oven to 350°F (175°C) and line a 12-cup muffin tin.
    2. In one bowl, whisk flour, arrowroot, milk, cocoa, baking powder, baking soda, and salt.
    3. In a separate large bowl, whisk eggs, both sugars, oil, and vanilla until smooth.
    4. Stir in sour cream until combined.
    5. Add dry ingredients to wet, mixing gently.
    6. Stir in hot coffee/water until batter is smooth and thin.
    7. Divide evenly into liners (about ¾ full).
    8. Bake 18–20 min or until a toothpick comes out clean. Cool completely.

Whipped White Chocolate Ganache

  • . Place white chocolate in a heatproof bowl.
    2. Heat ½ cup cream until just simmering, then pour over chocolate. Let sit 2 min, then stir until
    smooth.
    3. Stir in vanilla and salt.
    4. Add remaining ½ cup cream (cold) and mix in.
    5. Cover and chill 2–3 hours until thickened but still soft.
    6. Whip with an electric mixer until fluffy and light (don’t overwhip).

Assembly
