Smashed Pickled Radish

  • Rinse and scrub off the radishes and trim the top and bottom.
    2. Place them on a sturdy surface and gently smash the radishes and garlic with the side of a large knife or a kitchen mallet until cracked but still whole.
    3. In a bowl, place the prepared radishes, diced shallot, smashed garlic and chopped dill.
    4. Add the apple cider vinegar, sugar, salt, pepper and olive oil. Stir gently so that the radishes are well coated in the marinade.
    5. Leave the salad for 25-30 minutes or for a deeper flavor, cover and refrigerate for 2 hours.
