Ingredients

  • 1 box Butter lettuce
  • 2 Endives chopped
  • 1/2 Radicchio sliced
  • 1 Fennel bulb sliced
  • 1 bunch Asparagus cut the ends off
  • 1 Red Bell pepper small dice
  • 2 Watermelon radish thinly sliced

Instructions

  • Wash all the vegetables.
    Slice endives, watermelon radish, radicchio, and fennel.
    Dice red pepper.
    Spread butter lettuce on the platter and place the vegetables on the top or incorporate it on the lettuce.
    Drizzle with Mint Vinaigrette.
