Valentine’s Chocolate Mousse

This Valentine’s Chocolate Mousse is an incredibly decadent dessert perfect for Valentine’s Day, a Valentine's date night, or any other special occasion.

Ingredients

  • 6 oz Dark chocolate chips or dark chocolate
  • 3 Eggs large, separated
  • 1/4 cup Granulated sugar
  • 2 tbsp Unsalted butter
  • 1 tbsp Vanilla
  • 1/4 tsp Salt
  • 1 cup Heavy cream
  • Fresh cherries for decorations or raspberries or strawberries

Instructions

  • Melt the Chocolate:
    
- In a heatproof bowl, combine the dark chocolate chips and unsalted butter. 
- Place the bowl over a pot of simmering water (double boiler method), stirring until the chocolate is completely melted and smooth. Remove from heat and let it cool slightly.
    2. Separate the Eggs:
    
- While the chocolate cools, separate the egg whites from the yolks into two different bowls.
    3. Whip the Egg Whites:
    
- Using a clean whisk or mixer, whip the egg whites until stiff peaks form. This will add the necessary lightness to the mousse.
    4. Combine Yolks with Chocolate:
    
- Once the melted chocolate has cooled slightly, add the egg yolks, granulated sugar, vanilla extract, and salt directly to the chocolate. Mix gently until well combined.
    5. Fold in the Whipped Egg Whites:
    
- Gently fold the whipped egg whites into the chocolate mixture in three parts, starting with a small amount to lighten the mixture and then incorporating the rest carefully to maintain the volume.
    6. Add the cream
    fold it into the chocolate mixture for a creamier texture.
    7. Chill:
    
- Divide the chocolate mousse into two serving cups or bowls. Cover and refrigerate for at least 1-2 hours to firm up.
    8. Serve:
    
- Before serving, you can top the mousse with additional whipped cream and garnish with a cherry if desired.

Note on Raw Eggs:
