    3. Stir in the garlic and freshly grated ginger. Let them cook for about a minute until fragrant.
    4. Add the chopped carrots and stir everything together for another minute before pouring in the vegetable broth.
    5. Bring everything to a boil, then reduce the heat and let the soup simmer until the carrots are completely tender for about 20 to 25 minutes.
    6. Once the carrots are soft enough to pierce easily with a fork, add cilantro, salt, and red pepper flakes, then cook for about 5 minutes.
    7. Take the soup off the heat and add coconut milk and lime juice.
    8. Blend the soup using an immersion blender or a high-speed blender. Taste before serving.
