For Dragon Fruit Simple Syrup:
- 2 cups Red dragon fruit frozen
- 1/2 cup Erythritol or sugar
- 1/2 cup Water
For Lavender Simple Syrup:
- 3 tbsp Dried lavender flowers
- 1/2 cup Erythritol or sugar
- 1/2 cup Water
Cocktail:
- 100 ml Empress indigo gin or other dry gin
- 1/4 cup Dragon fruit simple syrup
- 3 tbsp Lavender simple syrup
- 3 tbsp Lemon juice freshly squeezed
- 2 tbsp Lime juice freshly squeezed
- Ice
To Serve:
- Fresh ice
- Dried citrus slice, edible flowers, or a sprig of fresh lavender
- Club soda or bubbly prosecco optional
Make Dragon Fruit Syrup: In a small saucepan, combine dragon fruit puree, 1/2 cup sugar, and 1/2 cup water over medium heat. Stir until sugar dissolves. Let simmer for 5 minutes, then fine strain and cool to room temperature. Store in an airtight container. 2. Make Lavender Syrup: Combine water, sugar, and lavender flowers in a small saucepan. Simmer over low heat until sugar dissolves. Steep for 10 minutes. Fine strain and cool. Store in an airtight container. 3. Shake It Up: In a cocktail shaker, add gin, both syrups, lemon juice, and lime juice. Fill with fresh ice. Do a wet shake (or dry shake first if using egg white for foam).4. Serve: Fine strain into a chilled cocktail glass or coupe glass. Garnish with a lemon twist, lavender sprig, or dragon fruit slice.5.
