Easy Creamy Savory Sweet Potatoes Recipe

  • 2 lbs Sweet potatoes
  • 1/4 cup Butter unsalted
  • 4 cloves Garlic
  • 1/4 cup Heavy cream (optional) or coconut milk
  • Thyme Garnish or you can mix it in too
  • Chives Garnish, or you can mix it in too.
  • Salt To taste
  • Black peper To Taste

Instructions

  • Prep the sweet potatoes: Peel the sweet potatoes and cut them into roughly equal-sized chunks.
    Boil the sweet potatoes: Place the sweet potato chunks in a large pot and cover them with water.
    Bring the water to a boil over medium-high heat, then reduce the heat to medium-low and simmer for about 15-20 minutes, or until the sweet potatoes are fork-tender.
    Sauté the garlic and herbs: While the sweet potatoes are cooking, melt 2 tablespoons of butter in a small saucepan over medium heat.
    Add the minced garlic, dried thyme, and dried rosemary to the saucepan. Cook, stirring frequently, for 1-2 minutes or until the garlic is fragrant.
    Drain and mash: Once the sweet potatoes are cooked through, drain them in a colander and return them to the pot. Use a potato masher or fork to mash the sweet potatoes until they reach your desired consistency. Or use the blender for sommther consistency.
    Add the savory goodness: Add the sautéed garlic and herb mixture, remaining 2 tablespoons of butter, and heavy cream or milk to the pot with the mashed sweet potatoes.
    Season with salt and pepper to taste. Mix it up: Use a spoon or spatula to mix everything together until the butter is melted and the ingredients are well combined. Taste and adjust the seasoning if needed.
    Serve and garnish: Transfer the mashed sweet potatoes to a serving dish and garnish with chopped fresh parsley if desired. Serve hot as a side dish alongside your favorite main course.
