- 2 lbs Tomatillo husked
- 3 Roma tomatoes
- 3 Guajillo chili
- 1 Onion medim
- 1 Jalapeno medium
- 6 cloves Garlic
- 2 tbsp Lime juice
- 1 tsp Cumin
- 1 tsp Oregano dried
- 1 tbsp Olive oil
- 1 tbsp Cilantro chopped
- Salt to taste
Prep the Ingredients: Wash all the ingredients. Cook the chile in a small saucepan for 10 minutes in the water.Roast tomatoes and Tomatillo: Roast the tomatillos, onion, tomatoes, and garlic in the oven at 350 F for 20 minutes. Jalapeno: Remove the seeds if they are too spicy for you.Blend or Keep Chunky: Transfer all the ingredients to a food processor and blend them. For a smoother salsa, blend the mixture to your desired consistency. For a chunkier texture, simply leave it as is.Season: Add the lime juice and salt, then mix well.Let it Sit: Let the salsa sit for at least 30 minutes before serving. This allows the flavors to meld together beautifully.
