Ingredients

  • 2 lbs Tomatillo husked
  • 3 Roma tomatoes
  • 3 Guajillo chili
  • 1 Onion medim
  • 1 Jalapeno medium
  • 6 cloves Garlic
  • 2 tbsp Lime juice
  • 1 tsp Cumin
  • 1 tsp Oregano dried
  • 1 tbsp Olive oil
  • 1 tbsp Cilantro chopped
  • Salt to taste

Instructions

  • Prep the Ingredients: Wash all the ingredients. Cook the chile in a small saucepan for 10 minutes in the water.
Roast tomatoes and Tomatillo: Roast the tomatillos, onion, tomatoes, and garlic in the oven at 350 F for 20 minutes.
Jalapeno: Remove the seeds if they are too spicy for you.
Blend or Keep Chunky: Transfer all the ingredients to a food processor and blend them. For a smoother salsa, blend the mixture to your desired consistency. For a chunkier texture, simply leave it as is.
Season: Add the lime juice and salt, then mix well.
Let it Sit: Let the salsa sit for at least 30 minutes before serving. This allows the flavors to meld together beautifully.
