  2. Roast tomatoes and Tomatillo: Roast the tomatillos, onion, tomatoes, and garlic in the oven at 350 F for 20 minutes. 
  3. Jalapeno: Remove the seeds if they are too spicy for you.
  4. Blend or Keep Chunky: Transfer all the ingredients to a food processor and blend them. For a smoother salsa, blend the mixture to your desired consistency. For a chunkier texture, simply leave it as is.
  5. Season: Add the lime juice and salt, then mix well.
  6. Let it Sit: Let the salsa sit for at least 30 minutes before serving. This allows the flavors to meld together beautifully.

Traditional Way of Making Salsa Casera in Molcajete.

What is a Molcajete?

molcajete is a traditional Mexican mortar and pestle made from volcanic rock. Its rough, porous surface is perfect for grinding and blending ingredients, allowing for a more textured and flavorful result than mechanical food processors. The pestle, known as the tejolote, is used for crushing and mixing the ingredients against the walls of the molcajete. This ancient kitchen tool has been used for centuries in Mexican cuisine.   1. Prepare the Molcajete:

  • 1 Jalapeno medium
  • 6 cloves Garlic
  • 2 tbsp Lime juice
  • 1 tsp Cumin
  • 1 tsp Oregano dried
  • 1 tbsp Olive oil
  • 1 tbsp Cilantro chopped
  • Salt to taste

Instructions

  • Prep the Ingredients: Wash all the ingredients. Cook the chile in a small saucepan for 10 minutes in the water.
