Easy Strawberry Lemonade Popsicles (Vegan)

Ingredients

Pink Strawberry Layer

  • 2 1/2 cup Strawberries fresh or frozen
  • 4 tbsp Maple syrup or honey (add more if you like)
  • 1 tbsp Lemon juice
  • 2 tbsp Lemon zest
  • 1 cup Coconut yogurt or Greek yogurt

White Yogurt Layer

  • 2 cups Coconut yogurt plain or vanilla or Greek yogurt
  • 3 tbsp Maple syrup or honey
  • 1 tbsp Lemon juice

Instructions

  • Blend the pink layer: add strawberries, lemon juice, zest, honey, and yogurt to a high-speed blender and blend it until smooth and creamy. Taste and sweeten more if needed.
    2. Mix the white layer: Stir together coconut yogurt, lemon juice, and honey in a separate bowl until smooth.
    3. Layer and swirl: Alternate layers of strawberry puree and coconut yogurt (or Greek yogurt) into your molds. You can swirl them or keep separate layers for that pretty pink-and-white pop.
    4. Freeze: Insert sticks and freeze at least 6 hours or until solid.
    5. Unmold & serve: Run the sides of the mold under warm water for a few seconds to help slide them outside of the mold.
