Lilac Nettle Mint Raspberry Fermented Soda

This lilac, nettle, mint, and raspberry fermented soda is a refreshing spring recipe that uses foraged ingredients to support gut health and to help you create your own fermented soda at home.

Ingredients

  • 5 cups Lilac blossoms
  • 3 cups Fresh nettle
  • 3 cups Fresh mint
  • 3 cups Raspberries
  • 4 Limes
  • 1/4 cup Lime juice
  • 3/4 cup Raw honey
  • Filtered water

Instructions

  • Gently rinse your lilac blossoms and nettle. Remove any stems or debris.
    2. In a large glass jar, combine lilac, nettle, mint, and raspberries. Lightly crush the raspberries to release their juices.
    3. Add fresh lime juice and a couple of sliced limes.
    4. In a glass, dissolve the honey in warm water and add it to the jar.
    5. Pour in filtered water, leaving a little space at the top.
    6. Add your starter and give everything a gentle stir.
    7. Cover the jar loosely with a cloth and let it sit at room temperature for about 5 days. Stir once daily.
    8. When it has a slight tang and a gentle fizz, strain the liquid into bottles.
    9. Seal the bottles and let them sit for another day to build carbonation. This is when the second fermentation begins, and more bubbles form.
    10. You can keep it outside to keep it more fizzy, but u have to remember to burp the soda every day, or else refrigerate.
