As a nutrition consultant and chef, I’m always drawn to recipes that feel alive, ones that bubble, transform, and connect us to the season in a deeply sensory way. This spring lilac, nettle, mint fermented soda is exactly that. It’s floral, herbal, slightly tart, and gently effervescent, like spring captured in a glass.

Growing up in Poland, we fermented pretty much everything from cucumbers, cabbage, to fruits and vegetables. It was a way of preserving food for winter. But we also did a lot of freneting during the spring and summer and consumed it right after it was ready. I’ve always liked the kvass that we made from rye or vegetables. Kvass is a traditional, fermented beverage from Eastern Europe, often made from rye bread, giving it a tangy, slightly sweet, and earthy flavor with a subtle fizz, similar to a soda but with probiotic benefits. But we also used fruits, herbs, and diffrent veggies in it.

Fermented soda is easy to make, and you can add whatever you want. All your favorite herbs, fruits, and spices, and some sugar or honey. This fermented soda is delicious, supports gut health, and makes an excellent DIY recipe and DIY gift!

So during spring, I like to use spring herbs, veggies, edible flowers, and, when lilacs bloom and nettles start peeking through the soil, they are perfect for using and letting them transform into something refreshing and nourishing. This edible flower recipe is one of my favorite ways to celebrate the season.

Ingredients for Lilac Nettle Mint Raspberry Fermented Soda

  • Lilac blossom:  brings a soft floral flavor aroma that feels elegant. Always choose freshly picked blossoms at their peak, when their flavor is most vibrant and delicate.
  • Nettle : adds an earthy, green depth. It balances the sweetness and adds a grounding herbal note to the soda. I use young nettle tops because they’re tender and perfect for this kind of infusion.
  • Mint: lifts everything. It adds freshness and brightness, cutting through the floral notes and making the drink feel crisp and clean.
  • Raspberries: bring color and a gentle tartness. They also add just enough fruitiness to round out the flavors without turning it into a typical berry soda.
  • Lime: adds acidity, which is essential for balance. It wakes up all the flavors and gives that subtle tang that makes you want another sip.
  • Raw honey: feeds the fermentation while adding a soft, floral sweetness that pairs beautifully with lilac.
  • Fermented soda starter: is what gets everything going. I use a bit of whey or leftover liquid from a previous ferment to kickstart the process and ensure a lively, bubbly result. It is also optional. You can also get a free soda starter.

How to Make Lilac Nettle Mint Raspberry Fermented Soda

  • Gently rinse your lilac blossoms and nettle. Remove any stems or debris.
  • In a large glass jar, combine lilac, nettle, mint, and raspberries. Lightly crush the raspberries to release their juices.
  • Add fresh lime juice and a couple of sliced limes.
  • In a glass, dissolve the honey in warm water and add it to the jar.
  • Pour in filtered water, leaving a little space at the top.
  • Add your starter and give everything a gentle stir.
  • Cover the jar loosely with a cloth and let it sit at room temperature for about 5 days. Stir once daily.
  • When it has a slight tang and a gentle fizz, strain the liquid into bottles.
  • Seal the bottles and let them sit for another day to build carbonation. This is when the second fermentation begins, and more bubbles form.
  • You can keep it outside to keep it more fizzy, but u have to remember to burp the soda every day, or else refrigerate.
