- 2 lbs Cod
- 1 can Artichokes
- 10 oz Cherry tomatoes
- 1 Red bell pepper Diced
- 1 Yellow pepper Diced
- 1 Lemon juiced
- 1 tbsp Lemon zest
- 4 tbsp Pesto
- 2 tbsp Olive oil
- 1/2 tsp Red pepper flakes
- Salt to taste
- 1 tsp Italian Seasoning oprtional
- 2 tbsp Fresh basil chopped, for garnish
- Black pepper to taste
Preheat oven to 400 degrees F.Combine halved tomatoes, diced peppers, and artichokes on a large-rimmed sheet pan lined with parchment paper.Drizzle with olive oil and season with Italian seasoning, salt, red pepper flakes, and black pepper.Nestle cod fillets into the veggies, seasoning the top with lemon zest, and garlic. Squeeze of fresh lemon juice over the cod. Put some pesto on the top of the cod. Bake until fish reaches an internal temperature of 145 degrees F (check the thickest part of the fish with a meat thermometer), about 15 minutes.Sprinkle with fresh chopped basil, fresh parsley, or feta cheese.
