Mediterranean Cod Sheet Pan Dinner

As a nutrition consultant and chef, I’m on a mission to help you make satisfying and delicious meals. And let me tell you, I get a lot of requests for quick dinners that don’t skimp on flavor or nutrients. This 30-minute sheet pan Mediterranean cod is one of my all-time favorite recipes to recommend. Why? It’s an easy-baked cod recipe that checks ALL the boxes: high-protein, packed with fresh vegetables, and absolutely brimming with Mediterranean flavor.

I actually fell in love with a version of this dish while on vacation in Italy. We were staying in a little coastal town where every restaurant smelled like lemon trees and sea breeze. One night, we wandered into a tiny family-run spot tucked between crumbling stone buildings, and they served something almost exactly like this Mediterranean baked cod—perfectly flaky white fish nestled under sweet cherry tomatoes and briny olives, all drizzled with a lemony olive oil sauce. We ate it with warm crusty bread and a glass of crisp white wine as the sun set over the water. I came home determined to recreate it—and now, this easy baked cod recipe brings that same sunshine to my kitchen, no passport required.

The first time I made this, the buttery cod baked with tangy olives and sweet cherry tomatoes completely blew me away. My clients often rave that even their kids love it!

Best Brand of Pesto?

It is best to make fresh basil pesto. But if you are short on time, here is my favorite pesto from Seggiano. I like it because it doesn’t contain dairy, and it is made from cashews and pine nuts. The basil they use is also grown without chemicals and fertilizers, plus it tastes decadent.

Did you know?

Pesto, that glorious green sauce we all know and love, dates back to ancient Roman times! The original version was called moretum and was made by crushing herbs, garlic, and cheese with a mortar and pestle—hence the name pesto, from the Italian pestare, meaning “to pound or crush.” So every time you swirl pesto into your dish, you’re basically channeling centuries of delicious history (with way less elbow grease).

Ways to Serve Mediterranean Cod Sheet Pan Dinner

Balancing and Maximizing Flavors

Mediterranean cuisine is all about vibrant yet balanced flavors—zesty citrus, sweet tomatoes, briny olives, and pungent garlic come together in perfect harmony. But how do you ensure your dish achieves that gentle balance instead of leaning too far in one direction? Here are some tricks to enhance and balance the natural flavors in your Mediterranean cod recipe.

  1. Citrus Brightness: Always incorporate fresh lemon juice or zest into this dish. A splash of acidity complements the mild cod and fresh vegetables beautifully while cutting through richer elements like olive oil or marinated artichokes.
  2. Don’t Skimp on Herbs: Fresh herbs, like parsley or basil, add a garden-fresh vibrance. Remember, dried herbs can feel flat, so opt for fresh whenever possible. Cooking with fresh herbs will transform your dish.
  3. Salt and Sweet Play Together: If your dish feels too tangy, balance it with sweetness from roasted organic grape tomatoes or caramelized onions. Briny elements like kalamata olives and capers keep these sweet notes grounded.
  4. Spice It Up: A few red pepper flakes add just enough heat to make the flavors pop without overpowering the buttery cod. If you’re spice-averse, black pepper works too—simple yet effective.
