Pineapple Cucumber Lemonade With Basil

Ingredients

  • 1 1/2 cup Pinapple fresh or frozen
  • 1 cup Cucumber English, peeled
  • 1 cup Lemon juice Freshly squeezed
  • 3/4 cup Erythritol or other sweetener
  • 1/4 cup Basil
  • 10 cups Water
  • 8 Mint leaves
  • Mint leaves for decoration
  • Ice

Instructions

  • Start by chopping your sweet pineapple into small pieces.
    Peel your English cucumber using a vegetable peeler, then slice it into chunks. In a blender or with a hand blender, combine the pineapple, cup of water, cucumber, lemon juice, basil, mint and erythritol.
    Add cold water or coconut water and blend until smooth.
    Strain using a fine mesh strainer to remove the pulp — or keep the pulp if you love whole fruit goodness!
    Pour into a large pitcher, add more water, stir in a handful of fresh mint, and chill for at least 30 minutes.
    Serve over ice with a wedge of lime and a slice of pineapple or cucumber.
