- 1 1/2 cup Pinapple fresh or frozen
- 1 cup Cucumber English, peeled
- 1 cup Lemon juice Freshly squeezed
- 3/4 cup Erythritol or other sweetener
- 1/4 cup Basil
- 10 cups Water
- 8 Mint leaves
- Mint leaves for decoration

Start by chopping your sweet pineapple into small pieces.Peel your English cucumber using a vegetable peeler, then slice it into chunks. In a blender or with a hand blender, combine the pineapple, cup of water, cucumber, lemon juice, basil, mint and erythritol.Add cold water or coconut water and blend until smooth.Strain using a fine mesh strainer to remove the pulp — or keep the pulp if you love whole fruit goodness!Pour into a large pitcher, add more water, stir in a handful of fresh mint, and chill for at least 30 minutes.Serve over ice with a wedge of lime and a slice of pineapple or cucumber.
