Ingredients

Chia seed pudding

Fruit filling

  • 1 1/2 cup Rapspberries fresh
  • 1 cup Strawberries fresh, diced
  • 1 tbsp Raw honey
  • 1 tbsp Lemon juice

Fruit layer

  • 2 cups Plain coconut yogurt or Greek yogurt
  • 1 tbsp Maple syrup

Topping

  • 1 1/2 cup Bluebbries
  • 1/2 cup Shredded coconut

Instructions

  • Mix chia seeds, almond milk, maple syrup, and vanilla. Stir again after 5 minutes. Refrigerate for at least 3 hours or overnight until thick.
    2. Combine raspberries, strawberries, maple syrup, and lemon juice. Lightly mash and set aside.
    3. Stir yogurt with maple syrup until smooth.
    4. Assemble the Parfaits: Layer fruit filling, chia pudding, and yogurt. Repeat layers once more.
    5. Add Toppings: Top with blueberries and shredded coconut.
    6. Serve immediately or chill until ready to enjoy.
