  • Coconut milk: Full-fat coconut milk yields the creamiest results. You can use oat milk or almond milk for a lighter version, but the pudding will be slightly thinner. I tested both and prefer coconut milk,  the richness balances the tartness of the berries beautifully.
  • Maple syrup: Honey works just as well. If you’re going low-sugar, a few drops of pure stevia keep the pudding sweet without any bitterness.
  • Greek yogurt: If you want to skip the chia pudding layer entirely, plain Greek yogurt is a great swap; it still delivers the gut-healthy probiotic benefits and that creamy white layer.
  • Strawberries: Raspberries are a perfect red swap and add a slightly more tart flavor, which I actually love against the creamy pudding. Cherries (pitted) also work if you want something a little more unexpected.
  • Blueberries: Fresh is best here. Frozen blueberries tend to bleed and will turn your white layer purple, not quite the look we’re going for on the 4th of July.

  • Sweeten the Yogurt: Stir yogurt with maple syrup until smooth.
  • Assemble the Parfaits: Layer fruit filling, chia pudding, and yogurt. Repeat layers once more.
  • Add Toppings: Top with blueberries and shredded coconut.
  • Serve immediately or chill until ready to enjoy.

  • 1 cup Strawberries fresh, diced
  • 1 tbsp Raw honey
  • 1 tbsp Lemon juice

Fruit layer

Topping
