Chocolate Banana Chia Seed Pudding

As a nutrition consultant and chef, I’m on a mission to help you make satisfying and delicious meals that actually work in real life. I get a lot of requests for healthy breakfast ideas that don’t feel boring, restrictive, or overly complicated. Most women want something that feels comforting, tastes amazing, and still supports their energy and hormones. That’s exactly where this Chocolate Banana Chia Pudding comes in.

I like to eat chia seed pudding for breakfast because it is satisfying, full of fiber and omega-3s, and I can prep it ahead of time, so it is a perfect grab-and-go breakfast.  I want to feel good afterward, avoid a sugar crash, and don’t want to cook first thing in the morning. I want something creamy, nourishing, and ready when I open the fridge. This banana chia pudding has become one of my go-to chia pudding recipes because it checks every box.

I make it for myself during busy weeks, serve it when friends stay over for brunch, and recommend it to clients who want easy, realistic breakfast chia options. Or it could be a perfect Valentine’s Day breakfast in bed. If you’re new to chia pudding, this is the one that converts people. If you already love chia pudding, this chocolate version will quickly earn a permanent spot in your rotation. Four images show steps for making a banana chocolate recipe: ingredients on a table (bananas, chocolate, chia seeds, butter, honey, milk); stirring chia seeds with honey; mashing a banana on a plate; mixing chocolate and butter in a bowl.

Ingredients for Chocolate Banana Chia Seed Pudding

  • Chia seeds are the base of this chia breakfast pudding. I love how they transform liquid into a thick, pudding-like texture with almost no effort. They’re reliable, forgiving, and perfect for make-ahead breakfasts.
  • Bananas provide natural sweetness and creaminess. The riper the bananas, the better the flavor. They balance the chocolate, making this banana chia pudding feel rich and comforting without needing much added sweetener.
  • Raw Honey adds warmth and rounds out the flavors. I like honey here because it pairs beautifully with bananas and chocolate, adding a soft, mellow sweetness.
  • Chocolate is what makes this recipe feel special. Using good-quality chocolate or cocoa adds depth and richness. I like to use Lily’s chocolate because it doesn’t contain sugar.
  • Unsalted butter might surprise you, but a small amount adds silkiness and enhances the chocolate flavor. It makes the pudding taste more luxurious and satisfying.
  • Milk or plant milk brings everything together. Dairy milk creates extra creaminess, while plant milk keeps it light and flexible. Both work beautifully. I usually use goat milk.

Did you know?

Chia seeds were used as a fuel food by the Aztecs. The word chia actually comes from the Mayan word for “strength,” and warriors would carry chia seeds on long journeys because a small amount kept them energized for hours. Basically, the original grab-and-go snack… without the wrapper.

How to Make Chocolate Banana Chia Seed Pudding

  • In a bowl, mix the chia seeds with the almond milk and honey. Mix well and set aside for 15 – 20 minutes.
  • Mash the bananas very finely with a fork.
  • Note: You can also use a blender for the banana.
  • Once the chia has swelled and absorbed the milk, add the banana and mix well. Set aside.
  • Place the chocolate and butter in a bowl. Melt in a water bath or the microwave. The chocolate should be liquid enough to be able to pour it easily.
  • Note: If necessary, add more butter.
  • Assemble the Pudding: In a glass, add the chia mixture to almost fill the glass.
Add the melted chocolate. Set aside or refrigerate for 10 minutes to partially set the chocolate. Add the sliced banana, decorate with more liquid chocolate, and sprinkle with chocolate sprinkles. Let it rest for 1 hour in the refrigerator or overnight.
  • Refrigerate for several hours or overnight until thick and creamy
  • This overnight chia pudding thickens as it sits and tastes even better the next day.

How can I fix the pudding if it turns out too runny or too thick?

If it’s too runny
• Add more chia seeds, 1–2 teaspoons at a time
• Whisk very well so they don’t clump
• Let it sit for at least 20–30 minutes, then check again
• If needed, refrigerate a bit longer, chia pudding thickens over time, especially overnight

Pro tip: always give it one more stir after 10–15 minutes. That second whisk is the secret sauce.

If it’s too thick
• Stir in extra milk
• Add it gradually until you reach a creamy, pudding-like texture

Ingredient Substitutions

• Swap honey for maple syrup
• Use almond milk, coconut milk, or oat milk
• Add chopped nuts for texture and protein
• Mix in berries, cherries, or extra bananas
• Top with whipped cream or cashew cream
• Add hazelnut nut butter for extra richness
