Poland’s love affair with gingerbread, or pierrnik, goes back centuries. It is one of our favorite Christmas desserts. Some of our traditional ginger cakes are made 2 months ahead of time, and they age. Then baked right before holidays.  

The Polish city of Toruń is famous for its gingerbread cookies and other bakes. You can take gingerbread baking classes, which are fun, especially for the children. Known as Torunskier pierniki, these gingerbread cookies are often shaped into intricate designs or stamped with ornate patterns. Families would gather during long winter evenings to create these edible masterpieces. Each batch made memories as unique as the gingerbread recipes themselves.

I used a trusted gluten-free flour blend like Bob’s Red Mill, which creates a light and fluffy texture. If your flour mix contains xanthan gum, which binds the ingredients, mimicking the elasticity that gluten typically provides, you do not need to add one.

Blackstrap Molasses

Molasses is the heart of any classic gingerbread recipe. It brings all the spices together. Blackstrap molasses is a deep and earthy sweetener that adds complexity and a slightly smoky undertone to the cake.   3. Create a well in the center of the dry mixture. Add the wet ingredients: molasses, maple syrup, honey, melted butter, egg, water, and oil. Stir it with a wooden spatula until the batter is smooth and thick.
  4. Transfer the batter into the prepared pan, whether a bund pan, loaf pan, or classic cake pan. Use a moistened spatula to smooth the surface.
  5. Place the pan in the center of the oven and bake for 1 hour and 10 minutes, or until a toothpick inserted in the middle comes out with only a few moist crumbs.

Ingredients
  

  • 3 cups Gluten-free flour
  • 1 1/2 tsp Xantan gum only if your flour mix does not contain it
  • 2 tbsp Baking soda
  • 1 tbsp Baking powder
  • 3 tbsp German gingerbread spice mix in my blog
  • 3 tbsp Molasses
  • 1/2 cup Coconut sugar
  • 1/4 cup Honey
  • 4 tbsp Maple syrup
  • 8 oz Butter melted
  • 2 Eggs room temperature
  • 3 tbsp Avocado oil
  • 1 1/2 cup Warm water or goat milk, nut milk etc

  • Preheat your oven to 350°F (175°C).
