I absolutely love cranberries. I love sour fruits and sweet and sour flavors. Cranberries are quite popular in Polish cooking, particularly in the northern and eastern regions, where they grow naturally in bogs and marshlands. The Polish word for cranberry is “żurawina”, and they are a well-known fruit in Polish cuisine, though more commonly used in savory dishes and desserts. My family used to make preserves, sauces, or confiture (fruit preserves), served as a tangy accompaniment to meats, especially game or poultry. Nowadays, cranberries are also a big hit in baking especially in modern recipes or during the holiday season. One of the desserts my family used to make during winter and for holidays was a cranberry curd tart called “tarta zurawinowa.”

We made diffrent crust for diffrent kind of tarta zurawinowa. For this version, I made a gluten-free crust.

  • 4 cups Gluten-free flour
  • 8 oz Butter unsalted
  • 1 tbsp Xantham guam
  • 1/2 tsp Salt
  • 2 tbsp Coconut sugar only for sweet pies or tarts
  • 1 tbsp Apple cider vinegar
  • 2 Eggs
  • 1 cup Water Iced
