Ingredients

  • 12 Eggs hard-boiled
  • 3/4 cup Cheddar cheese shredded
  • 1/4 cup Mayo
  • 1/2 cup Sour cream or Greek yogurt
  • 1/2 cup Ham small dice
  • 1 tbsp Dijon mustard
  • 1 tbsp Lemon juice
  • 1/2 tsp Paprika
  • Salt to taste
  • Black pepper to taste
  • Chives for decoration
  • Cucumber for decoration
  • Radish for decoration

Instructions

Cooking Eggs

  • Place eggs in a large saucepan. Cover them with enough water (about an inch above the eggs). Bring to a rolling boil over high heat. Once boiling, remove the pan from the heat, cover, and let the eggs sit for 9–12 minutes (adjust based on egg size. After cooking, transfer the eggs to an ice-water bath. Let them cool completely, then peel your eggs gently. I like to peel my eggs under cold running water, which also helps. They come off more easily.

Prepare the Filling

  • Slice the hard-cooked eggs in half lengthwise and carefully scoop the yolks into a medium bowl. Use a fork or a food processor to mash the yolk until smooth. Add finely diced ham, shredded cheddar cheese, sour cream, and Dijon mustard. A spritz of lemon juice works wonders for brightness. Mix in some salt, pepper, cayenne pepper, or hot sauce if you like a kick. Stir everything together until you get a creamy, smooth filling.

Assembling the Stuffed Eggs

  • Take your egg white halves and place them on a platter. For stability. A little trick- you can trim a tiny slice off the bottom of each half so they lie flat. Carefully spoon or pipe the filling into the egg cavities using a piping bag, ziplock bag, or plastic wrap with the corner snipped off. A spoon works just fine, too! Fill each egg white generously for that luxurious look.

Decorating for Presentation

  • Sprinkle with paprika or Spanish smoked paprika for a pop of color.Garnish with a sprig of parsley or finely chopped green onion or chives for freshness.Use fresh radish or cucumber for color.Feeling fancy? Add a piece of crispy bacon or a touch of grated parmesan cheese.
