Cashew Cream Sauce (The Ultimate Dairy-Free Vegan Substitute)

Making cashew cream sauce is very easy. First, rinse and soak raw cashews. You will use them as a base for the sauce. Soaking the cashews makes them soft, which will help with a creamy consistency. It will also make cashew easier to digest.

I like to soak the cashews for 4 hours in cold water in a bowl. Rinse them first, then fill the bowl with water all that the cashews are immersed in the water entirely.

You do not want to over-soak the cashews because soaking for an extended period can make them bitter.

Making Cashew Cream Sauce

When your cashews are done soaking, drain them and blend them in a high-speed blender with the rest of the ingredients. It is essential to have a good quality blender to make the sauce creamy and smooth. Some of cheaper at the store will not do the trick) to make your cashew cream sauce!

For a time-saver, you can make a double batch and freeze it. I love batch cooking and knowing that I’ve already have premade ingredients for my more time-consuming recipes. Grab and go, and there you go!

The Base For Cashew Cream Sauce (Gluten Free,Vegan)

  • 2 cups cashews
  • 1 1/2 cup vegetable broth
  • 1/4 cup fresh squeezed lemon juice
  • 1 tsp salt

If you like thinner or creamier cashew cream, simply add more broth or coconut cream while blending.

Fun and Optional Add-Ins To Your Cashew Cream Sauce

Savory Cashew Sauce: Add dried herbs, onion powder, paprika, garlic, black pepper, or red pepper flakes.
Garlicky Cashew Sauce: Add 2-3 cloves of fresh garlic
Spicy Cashew Cream Sauce: (Mexican style all the way!) Add some habanero, jalapeno or serrano chile, cumin, cayenne pepper, lime juice, salt, and some fresh cilantro. Experiment and have some fun with it!
Cheesy Vegan Cashew Cream Sauce: Add some fresh garlic and Nutritional Yeast. Yummy, simple and delicious!
Sweet Cashew Cream Sauce: Add 1/2 cup full-fat coconut milk, 2 tablespoons vanilla extract, 3 tablespoons of honey, and some ground cinnamon to taste.

Soups, Stews, Curries, and other Sauces: Use the sauce to thicken the soups and stews and make them creamy.

Instructions

Soak the cashews

  • Put raw cashews into a large bowl and cover the cashews with cold water. Soak at room temperature for 4 hours.
  • Rinse the cashews and blend them with the remaining ingredients.
  • Blend in any optional add-ins
  • Use the Cashew Cream as desired. Transfer any remaining cashew cream to an airtight container and store in the fridge for up to 3 days.
