Wild garlic has one of the longest seasons of wild plants. Wild garlic season starts in early spring. The small, tender micro herb-like shoots start to appear in mid-February, and the plant reaches its full, leafy glory in late March.

What Is Wild Garlic?

Wild garlic, also known as ramsons, bear’s garlic, or Allium ursinum, is a leafy green herbaceous plant native to Europe and parts of Asia. It typically grows in damp woodland areas and is characterized by its long, slender leaves and white, star-shaped flowers. Wild garlic is closely related to cultivated garlic but has a milder and more delicate flavor profile. 

I used to forage wild garlic with my grandmother every spring. Foraging was a little tradition in my family that was very enjoyable. 

Wild garlic, known as “czosnek niedźwiedzi” in Polish, is and was popular in Poland, especially in spring when it is abundant in forests and woodlands. Polish cuisine often celebrates wild garlic in various dishes, including soups, salads, sauces, and dips.

One of the most common ways my family enjoyed wild garlic in Poland is by making “czosnkowa,” or wild garlic soup, a creamy and flavorful soup that showcases the herbaceous taste of the wild garlic leaves. Additionally, wild garlic is used to make pesto-like sauces, spreads, and dips, enjoyed as accompaniments to bread, potatoes, or meats.

Polish culinary traditions deeply value fresh, seasonal ingredients; wild garlic is no exception. Its distinctive flavor adds a unique twist to traditional Polish dishes, making it a sought-after ingredient when it is in season. Many people also enjoy foraging for wild garlic in the countryside, incorporating it into their home cooking to capture the essence of springtime.

You can also use feta or goat cheese or skip it altogether. For a savory cheese flavor, add nutritional yeast. Adjust the ingredients accordingly.
  • Extra virgin olive oil 
  • Fresh lemon juice 
  • Lemon zest
  • Salt 
  • Black pepper 

Optional Ingredients for Additional Flavor Variations:

  • Fresh herbs (such as parsley, chives, or dill)
  • Crushed red pepper flakes or chili powder (for heat)
  • Garlic cloves (for extra garlic flavor)
  • Nuts or seeds (such as pine nuts or sunflower seeds, toasted)
  • Parmesan cheese (for a cheesy twist)
  • Nutritional Yeast (for savory, cheesy twist for vegans)

How to Make Wild Garlic Dip

  1. Prepare the Wild Garlic: Rinse the wild garlic leaves thoroughly under cold water to remove any dirt or debris. Pat them dry with a clean kitchen towel and roughly chop them.
  2. Blend Ingredients: In a food processor or blender, combine the wild garlic leaves, Greek yogurt or sour cream, extra virgin olive oil, and fresh lemon juice. If you’re using any optional ingredients like herbs, garlic, or nuts, add them to the blender as well.
  3. Season to Taste: Season the mixture with salt and black pepper to taste. Wild garlic has a naturally pungent flavor, so you may not need as much salt as you would with other dips. You can always adjust the seasoning later if needed.
  4. Blend Until Smooth: Blend the ingredients until you achieve a smooth and creamy consistency. Pause occasionally to scrape down the sides of the blender or food processor to ensure all the ingredients are evenly incorporated.
  5. Taste and Adjust: Once blended, taste the dip and adjust the seasoning if necessary. You can add more salt, pepper, or lemon juice according to your preference.
