It is a heavenly dessert that will make you reach for more! 

Rose dark chocolate bark is an indulgent treat and one of my favorites. It combines the richness of chocolate (yum!) with the satisfying crunch of nuts and light pink rose petals.

It is easy and visually beautiful, making a wonderful handmade gift! This Brak is gluten-free, vegan, grain free, dairy free, and suitable for Paleo and Keto diets.

Ingredients:

  • Chocolate Choice: Opt for high-quality chocolate that melts smoothly and complements the delicate flavor of rose. Dark chocolate is a classic choice, but you can also experiment with milk or white chocolate for a different taste profile.
  • Form of Chocolate: While chocolate chips are convenient, chopped chocolate bars yield a smoother texture.
  • Toppings: You can be as creative as you want and add your favorite topping. For a visually stunning and aromatic touch, I chose my favorites, such as pistachios, walnuts, and edible rose petals.
  • Recommended Brands: Look for reputable chocolate brands known for their premium quality and flavor consistency. I used a sugar-free one from Liliys because I did not want my bark to be very sweet. Lily’s chocolate is sweetened with stevia. Lily’s chocolate is also fragrant dark chocolate, making this bark extra flavourful.

My Choice of Ingredients

Organic Edible Rose Petals: This fragrant and delicate herb adds a subtle floral aroma and a touch of elegance to any dish. Its petals boast a soft, romantic hue, evoking images of lush gardens and sun-drenched meadows.

Rose petals infuse each bite with a gentle sweetness and a hint of botanical allure that I love.

Chocolate: The star of the show, chocolate captivates with its rich, indulgent flavor and luxurious mouthfeel. Chocolate forms the luscious base that envelops each ingredient, providing the canvas upon which flavors and textures intertwine in harmonious bliss.

Flaky Sea Salt: Humble yet transformative, salt is the unsung hero that heightens the flavors of any dish. It balances sweetness and enhances the depth of the chocolate. You can also use coarse sea salt. 

Pistachios: Pistachios, with their green hue and crunchy, creamy texture, bring a delightful crunch and nutty essence to chocolate bark. Their subtle sweetness and earthy undertones complement the decadence of chocolate, adding complexity and intrigue to every mouthful.

Walnuts: Robust and hearty walnuts provide buttery richness and satisfying crunch.

Hemp Seeds: Hemp seeds in the rose chocolate bark recipe add a nutty crunch and nutritional boost, enriching the texture and flavor of the treat.

How do I Melt Chocolate to Make Bark?

Double Boiler Method:

  • Fill a saucepan with a couple of inches of water and gently simmer over medium-low heat.
  • Place a heatproof bowl (preferably stainless steel or glass) over the saucepan, ensuring that the bottom of the bowl does not touch the water.
  • Add the chopped chocolate to the bowl and stir occasionally with a heatproof spatula or wooden spoon as it melts.
  • Continue heating and stirring until the chocolate is completely melted and smooth. Be patient and avoid raising the heat too high, as chocolate can easily scorch.

Microwave Method:

  • Place the chopped chocolate in a microwave-safe bowl.
  • Microwave the chocolate in short intervals (about 20-30 seconds) on medium power, stirring well between intervals.
  • Be cautious not to overheat the chocolate. Microwave in short bursts and stir frequently to ensure even melting and prevent burning.
  • Continue microwaving and stirring until the chocolate is fully melted and smooth.

Avoid getting water or steam into the chocolate, as even a tiny amount can cause it to seize and become grainy. Also, don’t overheat the chocolate, creating a scorched or gritty texture.

    Pour the melted chocolate onto the prepared baking sheet and spread it into an even layer.
    Sprinkle the chopped pistachios, walnuts, rose petals and hemp seeds evenly over the melted chocolate, pressing them gently into the surface.
    Finish by lightly sprinkling flaky sea salt over the entire surface of the bark.
    Allow the chocolate bark to set at room temperature until firm, typically for 1 to 2 hours. You can also chill it in the refrigerator for about 30 minutes to speed up the process.
    Once set, use a sharp knife to break the chocolate bark into rustic shards or irregular pieces.
