I grew up around strawberries. As a kid, summers meant working on a strawberry farm, picking berries, and bringing some home to make our favorite summer recipes.   • Strawberries: Strawberries are the star here. I love making this during strawberry season when they’re naturally sweet and aromatic, but it works beautifully year-round. Cooking strawberries gently brings out their natural fruit juice and deepens their flavor without losing freshness. You can also use frozen strawberries for this recipe.

How to Make Easy Strawberry Coulis

  • Add the strawberries to a saucepan and cook gently until they soften and release their natural juices.
  • Stir in the allulose and lemon juice and let everything simmer briefly, just until the strawberries break down and the sauce looks syrupy.
  • Remove from heat and let the mixture cool slightly.
  • Put the sauce in the blender and blend it on teh high speed.
  • Pour the strawberry mixture into a fine-mesh sieve set over a bowl. Using the back of a spoon or spatula, press and squeeze the fruit through the sieve until you’re left with a smooth sauce and only seeds and pulp in the sieve.
  • Stir in the vanilla extract and allow the coulis to cool completely. As it cools, it will naturally thicken into a smooth, glossy strawberry sauce.

  • Allulose – Honey or maple syrup can be used if preferred
