- Place the pecans in a blender and blend several times.
- In a large bowl, mix the crushed pecans, cocoa powder, powdered sugar, cinnamon, nutmeg, and crushed cloves. Mix lightly.
- Pour the melted chocolate over the dry ingredients and mix well with a spatula or spoon.
- Leave the mixture in the refrigerator for about 30 minutes to set slightly and make it easier to shape the balls.
- Form small balls and roll in your chosen rolling mixture. Place back in the refrigerator for about 15 minutes and serve.
- The chocolate truffles can be kept in the refrigerator for up to 2 weeks.
