Apple Tart With Almond Crust

As a chef and nutrition consultant, I always look for ways to transform classic desserts into nourishing and healthier recipes that feel indulgent without being heavy or overly sweet. Fall season is the time I wait for all year, when the kitchen fills with the smell of baked apples, warm cinnamon, and that irresistible buttery crust an making delicious fall desserts. Nothing beats pies and tarts made at home, especially when you’re working with fresh apples that practically beg to be tucked into a simple apple tart filling.

I grew up baking traditional apple pies with my family, but as I started exploring gluten-free baking and healthier substitutions, I began experimenting with almond flour and nut-based crusts. That’s when I discovered how incredible a tart can be when paired with an almond crust. It’s nutty, rich, and holds together beautifully, creating the perfect foundation for apple recipes during the fall season. Over the years, this has become my go-to apple tart recipe, one I make for Thanksgiving, holiday gatherings, and quiet afternoons when I just want a slice of comfort with a cup of tea of coffee.

This easy apple tart recipe is buttery, nutty, and tart, yet balanced with warm spices like cinnamon and cardamom. It’s a healthy apple tart that’s sugar-free, gluten-free, and still feels like the best apple tart recipe I’ve ever made.

Ingredients for Apple Tart With Almond Crust

  • Almond crust: You can use almond flour or ground almonds as the base, which creates a nut crust that’s naturally gluten-free and filled with protein. It adds a buttery texture even without real butter and makes the tart hearty but light at the same time. This almond crust also works well as the base for other fruit tarts, like my cranberry curd tart (gluten-free) if you want to mix it up.
  • Apples: Fresh apples are the heart of this recipe. I prefer a mix of tart and sweet apples for a layered flavor, such as Granny Smith for its tartness and Honeycrisp for its natural sweetness. Apple tart with fresh apples just tastes brighter and fresher than canned or pre-cooked fillings.
  • Butter: A little butter gives the filling richness and creates that buttery aroma that makes this tart feel like fall comfort food. You can easily swap for coconut oil if you want a fully vegan apple tart.
  • Apple butter: This adds depth and concentrated apple flavor to the filling, making it taste like an incredible tart rather than just sliced apples in crust.
  • Lemon juice: Essential for brightness and keeping the apples from browning. It adds a little zing to balance the buttery crust.
  • Allulose: My sweetener of choice for a sugar-free apple tart recipe. It bakes beautifully without spiking blood sugar, which is important for making a healthy apple tart.
  • Cinnamon and cardamom: These spices bring warmth and coziness to the tart, highlighting the fall flavor we crave during holiday baking

Did you know?

Apple tarts go way back in European baking, especially in France and England, where bakers prized them for being simple yet elegant.

How to Make Apple Tart

Almond Crust

  • Soak dates for 2 hours. Add blanched almonds to the food processor and pulse to crumble. (You could also use almond flour, but I like the crust to be more crunchy, so I used almonds in the food processor.) Add coconut flakes and pulse it again. Add soaked dates and pulse it again. Add coconut oil, ghee, or butter and pulse it again to paste. If it is not holding together, add some water from the soaked dates. Transfer it and press it into the pan to the removable bottom tart form. Bake it at 350°F for 20 minutes until golden brown. Cool before filling: Allow the crust to cool completely before adding your filling, especially for unbaked fillings. You can cover the edges of the crust with parchment paper if they brown too quickly during baking.

Apple Filling

  • Slice your apples thinly and toss them with lemon juice, allulose, cinnamon, cardamom, and a pinch of salt.
  • Layer the apples in the crust, overlapping them in a pretty pattern. Nothing beats the look of a homemade tart with fanned apple slices; it looks like you spent hours in the kitchen.
  • Put some butter or vegan butter pieces on top of the apples.
  • Bake it at 375°F for 30 minutes or until the apples are fork-tender, and the crust is golden.

Ingredient Substitutions

  • For a vegan or eggless apple tart, use coconut oil or vegan butter in the crust.
  • If you don’t have allulose, honey or maple syrup works well, though it won’t be sugar-free.
  • You can swap almond flour with almond meal for a slightly more rustic texture.
  • For a puffier version, you can even make an apple puff pastry tart using store-bought puff pastry.

Chef Angie’s Tips

  • Slice the apples evenly so they cook at the same rate. A mandolin makes this easy.
  • Don’t skimp on the spices, cinnamon and cardamom are what make this tart taste like fall season magic.
  • Bake the crust slightly before adding apples so it doesn’t get soggy.
  • If you want a glossy finish, brush the apples with a touch of warmed apricot jam after baking.
