  • Gluten-free pasta: I use gluten-free pasta, but you can use a diffrent kind too.
  • Dried cranberries: I used dried cranberries but you can use fresh ones too; but cook them first. They add tartness and sweetness to teh dish. They soak up the olive oil and herbs beautifully, giving each bite a burst of holiday flavor.
  • Onion and bell pepper: Both bring a gentle sweetness when sautéed and add a bit of crunch and texture contrast to the pasta.
  • Spinach: I add this at the end for a pop of color, freshness and nutrients. It wilts slightly in the warmth of the pasta without overpowering the other flavors.
  • Garlic: Essential for depth and aroma. Garlic adds a savory note that balances the sweet cranberries.
  • Rosemary and sage: These herbs are the backbone of the holiday flavor profile. They evoke classic Christmas dinner flavors and pair beautifully with cranberries.
  • Nutritional yeast: I use this instead of cheese for a subtle, nutty, savory flavor. It melts slightly into the pasta, adding umami.

  • Put the spinach in the bowl, then transfer the hot pasta on teh top of it and let it sit for 5 minutes until the spinach wilts slightly.
  • Add a little apple cider vinegar to balance the flavors.
  • Season generously with salt and black pepper to balance the sweetness of the cranberries.
